Not Feeling Well? Have Some Miso Soup! :D


I wasn't feeling too well yesterday and my mom knew just what to get me in order to make me feel better! Shiro miso paste, firm tofu, and a cookie! If you didn't know already, I LOVE PUMPKIN EVERYTHING! That's why she got me the cookie! xD 


I already had the dashi and wakame so it took me around 7 minutes to make this nutritious and delicious soup! I always add a little shichimi on top for added flavor! ^-^

So if you are feeling under the weather, try giving this soup a try! It's easy to make and is well worth it!!!

My Japanese Summer Foods-Part 1: Mentsuyu, Somen Noodles, and Hiyayakko!

There's no getting around it...summer can get unbearably hot! What a better way to cool off than to help yourself to nearly effortless, refreshingly cold Japanese dishes? Well, that's how I have stayed cool so far! This is the first part of my Japanese summer dish posts because I do plan on making more so stay tuned!!!

This post is about mentsuyu, somen noodles, and hiyayakko~! :D

Ideally, the first thing to make would be mentsuyu which is a multipurpose sauce that is typically used for dipping during the hot summer months in Japan. Now...let's get cooking, shall we?

Here's what you will need:


Serving: 1 Cup

-1/2 cup soy sauce
-1/2 sake
-1/4 cup mirin
-handful of bonito flakes (katsuoboshi)


Add everything into a pot!


Bring it to a boil.


After it begins to boil, remove the pot from the heat, put on a lid, and allow it to completely cool off. 


After the sauce has cooled down, strain the bonito flakes out of it.


Use a spoon to press down on the bonito flakes to make sure that all of the sauce has been strained into the bottom container.


And...there you have it! You can leave it in the refrigerator and it lasts for a few weeks! I only made this amount because I used all of the sake that I had left to make this. If you have enough of each of the ingredients, I highly recommend making a good amount of this so you have it at the ready! Just remember that mentsuyu is always two parts soy sauce and sake and one part mirin!

Now onto our first dish of the summer: Somen Noodles!

Somen noodles are thin Japanese noodles made from wheat flour and are usually served cold. They are so delicious and refreshing! 

Here is what you need:


-1/4 cup mentsuyu
-1/2 cup water
-Somen noodles
-Ginger (peeled and grated)
-Green onions (chopped)
-Optional: Nori 


I didn't take any pictures during the cooking process! It's pretty simple so I will just sum it up:

First, cook the noodles according to the package directions and make sure that when you strain them, take special care to get all of the starch out! Treat the noodles like laundry that you just washed in the river! lol xD 

Be sure to place the noodles in a bowl of ice water to keep them cold! If you want, chop up some nori and place it on top of the noodles! Yum! 

Mix the mentsuyu and water together and stir it well with chopsticks. Grate peeled fresh ginger and chop a green onion. Add the green onions and ginger to the sauce, dip the noodles, and enjoy!

Last, but certainly not least is...hiyayakko!

Hiyayakko (冷奴) or cold tofu, is a chilled tofu dish that can be served with a variety of toppings!

According to Wikipedia, "Hiya means cold, and yakko refers to the servants of samurai during the Edo period in Japan."



Here is what you need for my version:

-1 small block or half a block of silken or soft tofu
-Peeled and grated ginger
-Bonito flakes
-Green Onion
-Karashi
-Soy sauce


All you have to do is carefully take the tofu out of it's package and pat it down gently with a paper towel. Be careful because soft tofu is very delicate! Place it on a plate.

Add any ingredients that you like! This gives you a chance to be creative with the dish! I used what I had in my kitchen at the time: green onions, grated ginger, and karashi (a Japanese mustard, usually spicy), and bonito flakes! I would like to try it with grated daikon next time! 

All you have to do next is pour a little soy sauce over the tofu and it's toppings and that's it! I had this a few days ago and I think it's absolutely delicious! Please give it a try! ^-^

Miso Mushroom and Spinach Soup!

This recipe is based off of a recipe that I found by Gordon Ramsay called "Noodle Soup With Poached Egg and Spring Onion." It's just like his, but I add a few more things here and there! ;)

My boyfriend was actually not feeling well at work so I made this tasty and healthy soup to make him feel better and I have to say...it worked! ^-^

Here is what you will need ( I forgot to take a picture of the ingredients so bear with me! ^^;):

-A package of udon noodles
-Fresh baby spinach
-Fresh sliced portobello mushrooms
-Dried shiitake mushrooms
-1 egg
-Dashi stock
-Sake
-Chopped green onions
-Freshly grated ginger
-Shiro miso
-Optional: Narutomaki or kamaboko
-Optional: Shichimi


First of all, place the dried mushrooms in a container with warm water and allow them to re-hydrate for about 20 minutes. Save the broth.


Make the dashi stock. I make it using dashi granules.


Bring it to a boil on high heat and use a whisk to make sure that all of the granules have dissolved.


Grate some peeled fresh ginger. I don't typically measure for this recipe because everything is really to your own personal taste.


After 20 minutes, remove the mushrooms from the water and chop them into slices and place them in the stock.


Bring the dashi stock to a low boil again, but this time add in soy sauce, sake, freshly grated ginger, and some of the leftover mushrooms broth to taste.



Boil the udon noodles according to the directions on the package.


Bring the stock to a simmer and gently add in an egg and poach it.


Next, get a bowl ready and add some raw portobello mushrooms to the bottom...


Followed by the cooked udon noodles...


And then add some cleaned and fresh baby spinach on top! Almost there! xD


Don't forget to chop up at least 1 green onion! 


Now for my favorite part...add in as much miso as you like! 


I'm all out of miso now :(

Although it's optional, adding in some narutomaki or kamaboko (pictured above) adds a great flavor to the soup!

The only thing that my boyfriend doesn't like on his is the poached egg! His kamaboko are hiding! xP


The way I make it is enough for exactly two servings! Perfect! 


Here's a close up! Just look at that tasty shichimi on top! I highly recommend using it!

I Made Tori Zosui (Chicken Porridge) For The First Time!

I noticed that I have been doing a lot of impromptu cooking lately. I had friends coming over for dinner last week and they were bringing pasta over for dinner for me to make. Lately, I have been staying away from a lot of foods that I used to love like spaghetti and some meats so I wanted to make something different for myself. Therefore, I didn't really want to have spaghetti and sauce for dinner so I got a little creative! 

I decided to make chicken porridge or tori zosui in Japanese. It's a delicious, hearty, and healthy dish that I decided to make! 


When I decide to make this again (hopefully soon), I can post the recipe! ^-^

All it consists of is chicken stock, dashi, mirin, steamed rice, chicken, freshly grated ginger, and some salt and pepper for seasoning!


No Sauce...No Problem!

A few days ago, my boyfriend wanted spaghetti after a long day's work. I immedietly told him that I would make it without a problem, but then I realized something...we didn't have any sauce!!! Instead of panic or send his tired butt to the store, I decided to make do with what I had in the fridge.

This is what I ended up with: A Mushroom Garlic Butter Sauce.


I finely diced fresh garlic cloves and roughly chopped some leftover mushrooms into small pieces. I put a non-stick pan on the stove and heated it on medium heat. First I added in the garlic and stirred it until fragrant followed by the mushrooms. I then added in butter and asiago cheese until I got the consistency that I wanted and...voila! ^-^


My boyfriend was so impressed by this sauce that was made on the fly that he wanted me to make it for him again!!! It was so yummy! :D

Poached Egg on Toast = My New Favorite Breakfast!!!


This is such a healthy recipe...and it's easy to make too! The first time I made this a few weeks ago, I was planning on going to the gym and wanted a good breakfast that will energize me and give me all of the necessary proteins that I needed. 

I looked it up somewhere online and found out how to make this and I was so glad that I did! It takes about 7-10 minutes to make! 

It's also best served on wheat bread!!! xD

Homemade Chocolate peanut Butter Banana smoothie!

During the summer, it's a good idea to make things that will cool you down on a hot day! I enjoy coming up with different ideas for smoothies! I almost always include a frozen banana! xD


Here's what you need:

-5 ice cubes
-1 cup soy milk
-1 frozen banana
-About 1 Tbsp. honey
-2 Tbsp. creamy peanut butter (not pictured)
-About 1 tsp. cacao powder (or cocoa powder)


For some reason, I always put the ice in first! xP


Then the banana...


And everything else! Blend it all together and...


IT'S DONE! So refreshing!!! xD

My Homemade Chai Creme Frappuccino!

I absolutely love the frappuccinos from Starbucks, especially the chai creme one! A grande chai creme frappuccino with whipped cream and soy milk is my usual! :P

I wanted to be able to make it at home and tried all sorts of variations and I'm very pleased with what I have come up with!

All you need is:

-6-8 ice cubes
-1 cup soy milk
-1/2 cup Tazo chai latte concentrate
-Maple Syrup (I used Mrs. Butterworth's!)
-A blender (DUH! xD)

First drop the ice cubes into the blender.

Next add in the soy milk...

And the chai...

And lastly...add in the maple syrup to taste!

blend, Blend, BLEND!!! I usually use "High Pulse" to break up the ice and then use the "Frozen Drink" option and I wait!

Taste it to make sure it's right and pour into your favorite glass!

And IT'S DONE! If you have whipped cream, you could always add that on top and maybe sprinkle on some cinnamon!

This is perfect for those hot summer days and it literally takes minutes to make! If you have a blender, spend a couple of bucks and do yourself a favor my making this amazing drink! ^-^
